The docs in SATestAdd.py say “Choose from: configure, make, xcodebuild”… are those the only build systems that I can assume are installed?

Yes. You can also assume that python (preferred) and perl are installed.

Installed where?

SATestAdd.py calls scan-build, which supports interposition on these build systems.
